Every step is undertaken by Macaw Kakau: selecting which varieties to grow, fertilizing, cultivating, growing under the canopy of native trees, controlling the harvest, and careful fermentation of the beans, all to make the most delicious chocolate. Macaw Kakau continue an ancient tradition by growing heirloom varieties of cacao, which are historically successful in the region. Their blend of beans has a unique character made possible only by their precise location, knowledge, and practices. The Macaw Kakau Sanctuary also grows coffee, named after Don Roberto, who helped create the cacao agroforestry system. This coffee’s inclusion complements the chocolate for a smokey, full-flavored, and creamy bar.
