Fermentation
After a slow, 30-day maceration on the skins of each individual varietal, the Nebbiolo and Barbera are aged in oak barriques

Cured meats, hard cheeses, burgers, roasts, and hearty pastas.
The Vintage
A smaller harvest than 2018, 2019 is considered to be a classic vintage. After a cold winter, and cool, spring rains, a hot summer, and mild harvest weather resulted in the beautiful fruit for which the Langhe hills are known.
