The oil’s flavor is medium-fruity, sweet, and enveloping on the palate, with a soft and velvety texture. It is amber-green in color, with shades of yellow, and with notes of almond, field grass, and artichoke. Pastorella Extra Virgin Olive Oil is made from a single varietal, Ogliarola Garganica, an olive native to the region, and noted for its intense taste and delicate aroma. The olives are harvested from about 2,000 organically grown, low-yield, old-growth trees. By dusk, on the day of harvest, the olives are transported to the mill. By the first light of dawn, they are washed, prepared, and traditionally cold-pressed—all within 12 hours of harvest. Made with the olive’s natural flavor and healthy qualities in mind, the oil is unfiltered, leading to a finished product characterized by considerable density and almost no transparency.
