Wayward Spirits’ flagship, this is a rich and complex whiskey. Expect intense fruit on the nose, with dried cherries, figs, and citrus zest. On the palate, a smooth, soft sparkle, with toasted malt, hazelnuts, blackberries, kiwi and fig roll. The finish is long, warm, and spicy, with pepper and citrus zest. Gently cut over 5 to 6 weeks, not chill filtered, not colored. Wayward Spirits’ small batch blending is a collaborative process between their team of 3 blenders, bringing together John’sdecades of classic scotch perspective, Julia’s extensive knowledge of world whiskey, and Maurice’s determination to create something approachable and flavorful.
Knockanore smoked cheese pairs nicely with the whiskey. Alternatively, the sharpness of Mount Leinster, an excellent Irish raw milk cheddar, would balance the port wood wonderfully. Milleens farmhouse cheese would make for a brave, complex pairing.
Ireland’s first vatted malt in decades—made up of 2 single malts from different distilleries, highlighting the art of the blender. The components are 3 triple distilled single malts (5 to 7 years old) from Great Northern Distillery, and a double distilled single malt (16 years old) from Cooley Distillery—all made from 100 % Irish malted barley. The exact make up varies from batch to batch.
