This balsamic vinegar of Modena is produced only from organic Lambrusco grapes aged in oak barrels. It has a density of 1.34, and is certified I.G.P. with no additional coloring, sweeteners, or thickeners.
The balsamic is intensely flavored, with a fine balance of sweet, sour, and fruity. Bright and shiny in appearance, it has a persistent, sweet, and slightly acidic scent. As it’s so dense, a little goes a long way here, working wonderfully with meat, grilled vegetables, and cheese.
