These ingredients are tipped onto a sizzling pan, and when the decadent aromatics make contact with its surface – whoosh! One large cloud of mouthwatering promise fills the kitchen.

Long days of diligence call for a Tawny Port Finish. Shuvabrato performs a dil que no back to the cooker, placing his glass on the edge of the counter. He imbibes the scent of the cooking Poha - and deeming it complete - removes the pan away from the cooker.
