About this product

A benchmark example of Ontario Cabernet Franc, produced with fruit from an exceptional vintage. Aromatics of crushed blackberries, cracked red peppercorns, wild strawberries, fresh marjoram, and sweet tobacco lead you to a harmonious fruit-forward palate and long finish, with accents of toasted almond, allspice, and a hint of dark chocolate.

Open-top stainless steel bins, with punch down once per day for 4 weeks
Pairings
The robust, concentrated estate fruit in this wine bring notes of spice and herbs alongside well-integrated tannins and beautifully balanced acidity which show off flavorful, well-seasoned food. Dishes like smoked ham with a maple jus, or applewood smoked chicken wings bring protein to balance tannins, and also savoriness in order to heighten the beautiful ripe fruit in this Cabernet Franc. Recipes that focus on meat alternatives, like teriyaki tempeh, or an umami-rich French dip sandwich that features sautéed portobello mushrooms in a spicy horseradish mustard show off the wine’s chameleon qualities to enhance a wide variety of savory dishes.
The Vintage
Sunny, dry days and cool nights produced beautifully ripe fruit with bright acidity. Slightly warmer and drier than usual, 2015 produced particularly ripe and concentrated wines.
