About this product

A Bordeaux-style blend reserved for superior vintages worthy of its creation. A wine full of dimension due to the blending of Bordeaux’s classic grapes (estate-grown Cabernet Franc, Merlot, and Cabernet Sauvignon). The nose has great spicy aromas of black pepper, chocolate, cinnamon, and nutmeg, complemented by ripe berry characters of blueberry and black fruits. The elegant cedar and vanilla characters are laced throughout the nose, as evidence of careful oak management. The full-bodied palate presents gripping tannins in high concentration, with a punch of black fruit characters, such as blueberry, black cherry, and black currants. Spices, tobacco, and leather round out the palate.

Fermentation
Dating back to the Roman Empire, in the ancient Italian tradition of the Veneto, grapes are dried for 3 weeks before fermentation to concentrate their flavors. Open-top stainless steel bins, with punch down twice per day for 4 weeks, release the traditional varieties’ full flavor potential.
Pairings
Consider beef or mature cheeses, and all manner of roasted beasts. Decant the wine at least one hour before service, and enjoy as this elegant giant opens up.
The Vintage
Sunny, dry days and cool nights produced beautifully ripe fruit, with bright acidity. Slightly warmer and drier than usual, the 2015 estate fruit produced particularly ripe and concentrated wines, even further enhanced by the partial drying of the grapes.
